Monkfish Stew

    1 pound monkfish fillet 
    ½ cup white wine 
    1 teaspoon salt

    ​2 white onions 
    1 cup fish stock 
    3 tablespoons fish sauce 
    1 tablespoon olive oil
    1 teaspoon oregano 
    ½ teaspoon fresh rosemary 
    1 cup of water 
    1 teaspoon sugar 
    1 teaspoon thyme 
    1 teaspoon coriander 


    Chop the monkfish fillet roughly and sprinkle it with all the salt, white pepper, fish sauce, oregano, fresh oregano, sugar, thyme, and coriander and stir well. Let the fish rest for 5 minutes.
